21 Day Fix Chocolate Chip Cookies

If you are like me .. you love your chocolate chip cookies. HOWEVER, the 21 Day Fix doesn't necessarily allow just any plain old chocolate chip cookie. It must be the Chocolate Chip Cookies from the FIXATE cookbook by Autumn Calabrese.
I bought the cookbook a year ago and today was the second time I used it. The first time I used it was about 6 months ago; I made Creamy Tomato Basil Soup. It was soo YUMMY! I will post that recipe another time!
I wanted to share this recipe because I know how hard it can be to find foods that are compatible with the 21DF. I just want to make certain that this is NOT my recipes. It is a copied version for the FIXATE cookbook.
I had a sweet tooth earlier so decided to make the Chocolate Chip Cookies. In my own honest opinion, I most likely won't make them again. They weren't awful, but they definitely aren't my favorite. I like my sugary chocolate chip cookies. Don't take my exact word and just not try them. Everyone has a different taste pallet, and well these just aren't for me. I can't figure out if it was the almond flour that left the weird taste, or the fact these contained no sugar?
I still want to share the recipe with you even though these are my fave!

Chocolate Chip Cookies
Services 26 (1 cookie each)
Prep time: 20 minutes
Cooking Time: 16 minutes
CONTAINER EQUIVALENTS (per serving): 1 1/2 yellow
3 c Almond Flour
1 tsp Baking Soda Gluten Free
1/4 tsp Sea Salt (or Himalayan Salt)
1/4 c Extra Virgin Organic Coconut Oil (melted)
1/4 c Pure Maple Syrup (or raw honey)
1 Large Egg
2 Large egg whites (1/4 cup)
1 tsp Pure Vanilla Extract
1/2 c Semi-sweet (or dark) Chocolate Chips
**I didn't have baking soda so I used 3x's the amount baking powder
**I used raw honey vs pure maple syrup
**I used regular coconut oil
1. Preheat oven to 375 degrees F.
2. Line two baking sheets with parchment paper and set aside
3. Combine almond flour, baking soda, and salt in a medium bowl; mix well and set aside.
4. Beat oil and maple syrup in a large mixer bowl until cream (approximately 4-5 minutes)
5. Add egg, egg whites, and extract; beat for an additional 2 minutes
6. Add almond flour mixture to egg mixture; mix until blended
7. Add Chocolate chips; mix until just blended
8. Drop by rounded tbsp onto prepared baking sheets. Flatten cookies with a spatula if traditional cookie appearance is desired. Bake for 14 to 16 minutes, or until golden brown.
9. Store in an airtight container
